Crisp and Crunchy, Hot and Spicy, tasty prawns

Ingredients
- 6 green prawns
- 1 teaspoon wasabi paste
- 1 tablespoon (Kewpie) mayonnaise
- ½-1 teaspoon wasabi paste *extra
- ¼ cup panko breadcrumbs
- 20g wasabi peas
- 1 tablespoon cornflour
- 1 small egg, lightly beaten
- vegetable oil for shallow frying
Method
- Peel prawns and keep tails intact, devein and butterfly
- Spread wasabi paste over the prawns, refrigerate for 20 minutes
- Mix mayonnaise and *extra wasabi paste in a small bowl, set aside
- Place breadcrumbs and wasabi peas into a food processor and pulse to combine
- Dust the prawns in cornflour and shake off excess
- Dip in the beaten egg and coat with the crumbs mixture
- Heat oil in a frying pan oven medium-high heat. Add prawns and cook until golden brown and cooked through. Drain on paper towel
- Serve with wasabi mayonnaise. Enjoy!
- Note: I prefer Kewpie mayonnaise but you can use whatever you have
