Ingredients
- 6 large (150-200g) green prawns,
- ½ teaspoon Sambal Oelek (chilli paste)
- 1 teaspoon mustard seeds
- 1 tablespoon oil
- 1 tablespoon grated onion
- ½ teaspoon grated garlic
- ½ teaspoon ground cumin
- pinch turmeric
- 1 teaspoon brown sugar
- ¼ cup of water
- 1 teaspoon lemon juice
- 2-3 dried curried leaves
- Wedge of lemon
- A sprig of dill for garnish *optional
Method
- Peel and devein prawns, leaving tails on
- Heat oil in a pan, add onions and garlic, stir and cook for 1-2 minutes
- Add mustard seeds and chilli paste, stir and cook for another minute
- Add cumin, turmeric, sugar, water and lemon juice to the pan
- Bring to the boil and reduce heat, simmer until sauce reduces and thickens slightly
- Add prawns and curry leaves, cook for 4-6 minutes turning the prawns to cook evenly
- Arrange prawns on a serving plate with a wedge of lemon on the side
- Drizzle any remaining sauce over the prawns and sprigs of *optional dill on top
- Serve and Enjoy!
