Crispy lemon flavoured fish drizzled with garlic brown butter sauce

Ingredients
- Marinade
- 1 tablespoon finely chopped onion
- 1 tablespoon lemon juice
- 20 ml oil
- salt and pepper
- 1 white fillet of fish
- ¼ cup plain flour
- 1 egg, beaten
- panko breadcrumbs (enough to coat the fillet)
- 1 tablespoon oil, for frying
- 1 tablespoon butter, extra
Sauce
- 1 tablespoon butter
- 1 teaspoon garlic, crushed
Garnish with chopped parsley
Method
- Remove skin and any fish bones from the fillet
- Mix the onion, lemon juice, oil, salt and pepper together and soak the fish fillet in the mixture, coating both sides. Refrigerate for at least 1 hour
- Drain the fish, then coat the fillet in plain flour, egg and breadcrumbs
- Heat frying oil and extra butter in a frying pan large enough to take the fish fillet, cook until golden brown on both side (3-5 minutes depending on the thickness of the fish fillet)
- For the sauce;
- Melt butter in a small saucepan over medium-low heat, add garlic and stir while cooking until the butter turns brown but not burnt. Drizzle over the fish fillet and garnish with chopped parsley
