Creamy Pureé Parsnip

Creamy Pureé Parsnip by cooking meals for one

So Sweet and Silky Smooth


  • 2 parsnips
  • 1 garlic, crushed
  • 2 tablespoons cream
  • 3 tablespoons milk
  • 15g butter
  • pinch salt
  • pinch of smoked paprika
  • 1 teaspoon chopped chives


  • Cut the parsnip into chunks
  • Add the parsnip, garlic, cream, milk and butter to a small saucepan bring to a boil, Reduce heat. Simmer and cook (approx. 10-12 minutes) until the parsnips are soft enough to mash to a smooth consistency and the liquid is almost absorbed (Do not drain off any of the liquid) you may need to add a little more milk or a dob of butter if to get the creamy smooth consistency
  • Sprinkle the smoked paprika and chives over the top
