So Sweet and Silky Smooth
Ingredients
- 2 parsnips
- 1 garlic, crushed
- 2 tablespoons cream
- 3 tablespoons milk
- 15g butter
- pinch salt
- pinch of smoked paprika
- 1 teaspoon chopped chives
Method
- Cut the parsnip into chunks
- Add the parsnip, garlic, cream, milk and butter to a small saucepan bring to a boil, Reduce heat. Simmer and cook (approx. 10-12 minutes) until the parsnips are soft enough to mash to a smooth consistency and the liquid is almost absorbed (Do not drain off any of the liquid) you may need to add a little more milk or a dob of butter if to get the creamy smooth consistency
- Sprinkle the smoked paprika and chives over the top
