Ingredients
- 30g soba noodles
- 2 tablespoons red cabbage, shredded
- 2 tablespoons green cabbage, shredded
- 2 tablespoons julienned carrot
- 2 tablespoons thinly sliced red capsicum
- 2 tablespoons edamame beans
- ½ stick celery, thinly sliced
- 2 snow peas, thinly sliced lengthways
- pinch white sesame seeds
- pinch black sesame seeds
- wedge of lime
Dressing:
- 2 tablespoons Kewpie Roasted Sesame Japanese dressing
- 1 tablespoon lime juice
- 1 teaspoon soy sauce
- splash sesame oil
Method
- Cook noodles according to the packet, (approx. 3-4 minutes), then drain
- Place the noodles and all the salad vegetables in a medium-size bowl
- Mix the dressing ingredients together and pour over the noodles and vegetables and gently toss to coat all
- Place in a serving bowl and sprinkle with black and white sesame seeds
- Serve with a wedge of lime. Enjoy!
- Note: You can substitute the cabbage and carrots with 6 tablespoons of ready mix coleslaw
