Soba Noodle Salad with Roasted Sesame Dressing

Ingredients

  • 30g soba noodles
  • 2 tablespoons red cabbage, shredded
  • 2 tablespoons green cabbage, shredded
  • 2 tablespoons julienned carrot
  • 2 tablespoons thinly sliced red capsicum
  • 2 tablespoons edamame beans
  • ½ stick celery, thinly sliced
  • 2 snow peas, thinly sliced lengthways
  • pinch white sesame seeds
  • pinch black sesame seeds
  • wedge of lime

Dressing:

  • 2 tablespoons Kewpie Roasted Sesame Japanese dressing
  • 1 tablespoon lime juice
  • 1 teaspoon soy sauce
  • splash sesame oil

Method

  • Cook noodles according to the packet, (approx. 3-4 minutes), then drain
  • Place the noodles and all the salad vegetables in a medium-size bowl
  • Mix the dressing ingredients together and pour over the noodles and vegetables and gently toss to coat all
  • Place in a serving bowl and sprinkle with black and white sesame seeds 
  • Serve with a wedge of lime. Enjoy!
  • Note:  You can substitute the cabbage and carrots with 6 tablespoons of ready mix coleslaw
