Ingredients
- 1 tablespoon chopped onion
- 6 pitted prunes, chopped
- 1 tablespoon sage leaves, chopped
- ½ pork fillet, (150g) butterflied
- spray oil
Method
Preheat oven 180º
- Combine prunes, onion and sage in a small bowl, mix well
- Cut the pork fillet down the centre but not right through, pound gently with a meat mallet to flatten
- Spread the middle of the fillet with the prune and sage mixture and wrap the fillet into a roll, tie with string to secure shape
- Heat fry pan over medium-high heat
- Spray pork fillet with oil and place in pan to brown on all sides
- Place the pork into a greased oven dish and cook for 8-10 minutes till cooked through
- Serve with salad or vegetables of choice
