Pork Fillet Stuffed with Prunes and Sage

Ingredients

  • 1 tablespoon chopped onion
  • 6 pitted prunes, chopped
  • 1 tablespoon sage leaves, chopped
  • ½ pork fillet, (150g) butterflied
  • spray oil

Method

Preheat oven 180º

  • Combine prunes, onion and sage in a small bowl, mix well
  • Cut the pork fillet down the centre but not right through, pound gently with a meat mallet to flatten
  • Spread the middle of the fillet with the prune and sage mixture and wrap the fillet into a roll, tie with string to secure shape
  • Heat fry pan over medium-high heat
  • Spray pork fillet with oil and place in pan to brown on all sides
  • Place the pork into a greased oven dish and cook for 8-10 minutes till cooked through
  • Serve with salad or vegetables of choice
