Cooking time
20 Minutes
Ingredients
- ½-1 cup just cooked fresh gnocchi or pasta *see note
- 1 tablespoon oil
- 3-4 chicken tenderloins
- 1-2 green shallot, sliced
- 1 clove garlic, grated
- 100ml thicken cream
- 1 teaspoon chicken powder
- ½ small zucchini, thinly sliced
- ½ cup baby spinach
- ½ cup frozen peas
Method
- Season the chicken with salt and pepper on all sides.
- Heat pan over medium heat, then add the oil and chicken, cook until golden (approx. 2 minutes)
- Add the sliced shallots and garlic, to the pan and keep cooking, while turning for extra 2 minutes.
- Remove and set aside.
- Using the same pan, add the cream and bring to a simmer, add the vegetables, stir and cook for 2-3 minutes, until vegetables are just tender.
- Return the chicken with shallots and garlic to the pan. Add the gnocchi/pasta to the mix, stir to and heat through.
- Spoon onto a serving plate, garnish with toasted pine nuts, if using
- Serve and Enjoy!
- Note: Just a reminder that the gnocchi or pasta should be just slightly undercooked. It’ll keep cooking as it’s tossed in the sauce.
- I personally prefer to use fresh pasta because I can buy as much as I need. But dried pasta works just as well in this dish, so feel free to use that if you prefer!
