Vegetarian Omelette/Taco for One

A delicious 2-3 egg omelette filled with baby spinach, chopped cherry tomato and onion, panfry in a small frying pan. Cooked on both sides ands garnished with sliced cherry tomatoes daby spinach, red onion and sliced finger cucumber. When you’re feeling lazy and don’t want to spend hours in the kitchen, this is my go-to quick and easy meal. It’s super quick to make and it’s so tasty! Enjoy!

Ingredients

  • 2-3 eggs
  • 1 small handful of baby spinach, chopped
  • 1 cherry tomato, chopped
  • 2 tablespoons chopped onion
  • 1 tablespoon butter
  • Garnish: extras
  • 1-2 cherry tomatoes, sliced
  • 1 finger cucumber, sliced
  • Baby spinach leaves
  • 1 slice of red onion
  • Sweet chilli sauce*optional
  • Mayonnaise *optional

Method

  • • Add eggs to a bowl, and beat with a fork.

    • Add the spinach, tomato and the onion.

    • Heat a small frying pan over medium heat. Add the butter when melted add the egg mixture

    • Drag the egg from the outer edge of the pan to the centre, allowing the raw egg to cover the pan.

    • Cook for 2-3 minutes, carefully turn the omelette and cook 1-2 minutes or until cooked through.

    • Place the omelette onto a serving plate, with garnish

    Note:

    • I love the variety of this yummy light meal, great for breakfast, lunch or dinner.
