This soup has a subtle taste of curry

Ingredients
- 15g butter
- ½ small brown onion, chopped
- 1 teaspoon curry powder
- 1 teaspoon plain flour
- ½ cup *vegetable stock
- *2 cups of any vegetables you like, such as –
- ½ cup carrots, grated or chopped
- 1 stick celery, sliced
- 1 yellow marrow, chopped
- ½ bunch asparagus, chopped
- ½ cup parsnip, chopped
- ½ cup soft noodles
- salt and pepper
- ½ teaspoon Vegeta
- 1 cup *extra cup vegetable stock
- + more stock if needed
Method
- Melt butter in frypan and add onion, cook 1-2 minutes till softens
- Add curry powder, stir and cook for 1 minute
- Add plain flour, stir and cook for 1-2 minutes
- Add ½ cup vegetable stock, stir to combine set aside
- In a saucepan, add all the vegetables, the Vegeta and 1 cup of *extra stock
- Cook the vegetables for 10 minutes then add the onion and curry mixture and cook a further 10 minutes
- Add soft noodles and heat through, add more stock if needed
- Pour into a serving bowl and add chopped parsley to garnish
- Season with salt and pepper
