Mulligatawny Soup with Soft Noodles

This soup has a subtle taste of curry

Ingredients

  • 15g butter
  • ½ small brown onion, chopped
  • 1 teaspoon curry powder
  • 1 teaspoon plain flour
  • ½ cup *vegetable stock
  • *2 cups of any vegetables you like, such as –
  • ½ cup carrots, grated or chopped
  • 1 stick celery, sliced
  • 1 yellow marrow, chopped
  • ½ bunch asparagus, chopped
  • ½ cup parsnip, chopped
  • ½ cup soft noodles
  • salt and pepper
  • ½ teaspoon Vegeta
  • 1 cup *extra cup vegetable stock
  • + more stock if needed

Method

  • Melt butter in frypan and add onion, cook 1-2 minutes till softens
  • Add curry powder, stir and cook for 1 minute
  • Add plain flour, stir and cook for 1-2 minutes
  • Add ½ cup vegetable stock, stir to combine set aside
  • In a saucepan, add all the vegetables, the Vegeta and 1 cup of *extra stock 
  • Cook the vegetables for 10 minutes then add the onion and curry mixture and cook a further 10 minutes
  • Add soft noodles and heat through, add more stock if needed
  • Pour into a serving bowl and add chopped parsley to garnish
  • Season with salt and pepper
