What a deliciously healthy salad with a difference
Full of goodness and flavour
Ingredients
- A handful of mixed salad greens
- ¼ cup fresh basil leaves, torn
- ½ cup fresh raspberries
- ½ cup fresh blueberries
- 6-8 strawberries, halved
- 2 slices red onion
- Sprouts for garnish *optional
Dressing
- 1 tablespoon olive oil
- 1 tablespoon pomegranate molasses
- 1 teaspoon lime juice
- ¼ cup fresh raspberries
- ¼ cup blueberries
- 1 teaspoon Dijon mustard
Method
- Blend the dressing ingredients together until smooth
- Arrange the salad greens on a plate
- Sprinkle the torn basil leaves over the greens
- Arrange the berries evenly over on top of greens
- Sprinkle with the sliced onion and sprouts
- Drizzle the dressing over and serve
