Haloumi and Mushroom Stack for One

This is a delightful breakfast brunch. Well worth the extra effort in making this delicious, very filling meal with loads of nutritional value. Enjoy!

Ingredients

1 slice Haloumi

• 1-1½ cups sliced mushrooms

• 1 clove garlic, grated

• 2 tablespoons butter

• 1 tablespoon oil

• 1 poached egg or fried

• 1-2 tablespoon hummus

• ½ avocado, smashed

• 1 tablespoon basil pesto

Method

  • • Dry fry the Haloumi in a small frying pan over medium-high heat, cook for 1-2 minutes on eachside, until slightly charred. Remove from pan and set aside.
  • Using the same pan, add the oil and butter, heat through until butter has melted.
  •  Add the garlic and cook for 1 minute, add mushrooms and stir until they turn golden brown and start to soften (Approximately 3-5 minutes)
