Minted Lamb Loin Roast

Roast Lamb for one is here


  • boned lamb loin (3-4 chops)
  • mint jelly 
  • roasted vegetables of choice


  • ½ cup fresh breadcrumbs
  • 1 tablespoon chopped hazelnuts
  • ½ teaspoon mixed herbs
  • ½ tablespoon butter


Preheat oven 180ºc

Prepare vegetables (see roasted vegetables) and start cooking while preparing lamb

  • Ask the butcher to bone the lamb loin and leave the tail/flap on
  • Mix the breadcrumbs, hazelnuts, mixed herbs and butter together
  • Lay the lamb loin out opened
  • Pack the stuffing close to the thickest part of the lamb, wrap the tail/flap around and tie with string
  • Spread the minted jelly all over lamb 
  • Place on baking tray and cook in preheated oven for 25-30 minutes or until cooked to your liking
