Roast Lamb for one is here
Ingredients
- boned lamb loin (3-4 chops)
- mint jelly
- roasted vegetables of choice
Stuffing
- ½ cup fresh breadcrumbs
- 1 tablespoon chopped hazelnuts
- ½ teaspoon mixed herbs
- ½ tablespoon butter
Method
Preheat oven 180ºc
Prepare vegetables (see roasted vegetables) and start cooking while preparing lamb
- Ask the butcher to bone the lamb loin and leave the tail/flap on
- Mix the breadcrumbs, hazelnuts, mixed herbs and butter together
- Lay the lamb loin out opened
- Pack the stuffing close to the thickest part of the lamb, wrap the tail/flap around and tie with string
- Spread the minted jelly all over lamb
- Place on baking tray and cook in preheated oven for 25-30 minutes or until cooked to your liking
