Meatballs and BBQ Sauce

These meatballs have been adapted from a family favourite meatloaf.

Ingredients

  • 100g beef mince *See note
  • 50g sausage mince
  • ½ small brown onion, chopped
  • salt and pepper
  • 2 tablespoons breadcrumbs
  • 2 tablespoons milk
  • ½ teaspoon curry powder
  • ½ teaspoon chopped parsley
  • 1 teaspoon oil
  • ½ teaspoon butter

Sauce

  • ¼ cup water
  • 3 tablespoons tomato sauce
  • 1½ tablespoons Worcestershire sauce
  • 1 tablespoon white vinegar
  • ½ teaspoon instant coffee
  • ½ tablespoon butter
  • 1 tablespoon lemon juice
  • 1 teaspoon brown sugar

Method

  • Combine the first 8 ingredients to make the meatballs
  • Roll the mixture into balls. If too wet dust in a little plain flour
  • Heat frypan over medium heat add oil and butter
  • Pan fry the meatballs, turning to brown all over and cook for approx. 10 minutes
  • Meanwhile, in a small saucepan, add the sauce ingredients, bring to the boil, then reduce heat and simmer for 2-3 minutes
  • Pour sauce over the meatballs and cook for further 5 minutes.

  Serve with vegetables of choice

  Note: You can use 150g pork mince and omit the sausage mince if preferred
