Lemon Tagliatelle

Creamy Lemon Pasta with toasted pine nuts, lemon juice, rocket, basil and parmesan cheese

This pasta is quick and easy to make. It’s creamy, zesty and so flavoursome

Ingredients

  • 100g tagliatelle 
  • 2 tablespoons pine nuts
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • zest of ½ lemon
  • ½ cup grated parmesan cheese + extra for garnish
  • ½ cup fresh rocket 
  • ½ cup fresh basil
  • Salt
  • Black pepper

Garnish:

  • A sprig of fresh basil
  • Extra grated parmesan cheese 

Method

  • Cook pasta according to the packet, drain and reserve a little of the water
  • Meanwhile, toast the pine nuts in a dry frying pan over medium heat until fragrant. Stir to prevent burning. Remove from heat and set aside
  • Place the drained pasta into the frying pan, add the butter, lemon juice, zest, parmesan cheese, and a little of the reserved water. Stir over medium heat until it becomes creamy
  • Add the rocket and basil, stir until wilted. Season with salt and pepper
  • Place pasta in a serving bowl and garnish with a sprig of basil and extra grated cheese
  • Serve and Enjoy!
