Ingredients
- 100g tagliatelle
- 2 tablespoons pine nuts
- 2 tablespoons butter
- 1 tablespoon lemon juice
- zest of ½ lemon
- ½ cup grated parmesan cheese + extra for garnish
- ½ cup fresh rocket
- ½ cup fresh basil
- Salt
- Black pepper
Garnish:
- A sprig of fresh basil
- Extra grated parmesan cheese
Method
- Cook pasta according to the packet, drain and reserve a little of the water
- Meanwhile, toast the pine nuts in a dry frying pan over medium heat until fragrant. Stir to prevent burning. Remove from heat and set aside
- Place the drained pasta into the frying pan, add the butter, lemon juice, zest, parmesan cheese, and a little of the reserved water. Stir over medium heat until it becomes creamy
- Add the rocket and basil, stir until wilted. Season with salt and pepper
- Place pasta in a serving bowl and garnish with a sprig of basil and extra grated cheese
- Serve and Enjoy!
