Kimchi Meatloaf with Gochujang Sauce

SPICY HEALTHY DIFFERENT

Ingredients

  • ⅓ cup kimchi drained and roughly chopped
  • 1 tablespoon chopped onion
  • 1 clove garlic, grated
  • ½ teaspoon grated ginger
  • 1 egg white
  • 1 tablespoon oats
  • 1 teaspoon mushroom powder*see Note
  • ½ teaspoon fish sauce
  • ½ teaspoon sesame oil
  • 150g mince (beef, pork or veal)
  • Garnish with s sprig of flat leaf parsley

Gochujang Sauce

  • 1 tablespoon Gochujang paste
  • ¼ teaspoon minced garlic
  • ¼ teaspoon grated ginger
  • ½ teaspoon white vinegar
  • pinch brown sugar
  • dash sesame oil
  • dash fish sauce

Method

  • Preheat oven to 180ºc
  • Place all ingredients except the mince into a blender, pulse until  evenly chopped
  • Add the mince and blended ingredients to a bowl and mix well
  • Line a small loaf tin with baking paper and place the mince into the lined tin, gently pushing down the ingredients
  • Cook in the oven for 30 minutes or until cooked through (test with a skewer) remove and place on serving a plate
  • Meanwhile, make the Gochujang Sauce by combining all ingredients in a microwave jug. Heat in microwave for 1 minute, stir and pour over the cooked meatloaf and garnish with flat leaf parsley
  • Serve warm, Enjoy

Note: 

  • Make mushroom powder by blending dry mushrooms and then place in sealed container for future use

    Judy what is Gochujang Sauce and where do you get it Joy

      Hi Joy,
      Gochujang is a hot spicy pepper paste sauce, available from the Asian section of your supermarket. It’s in a red container and will keep in the refrigerator after opening.
