Honey Ginger Pork Stir Fry

Sweet, Sticky and so Tasty. A bowl full of yumminess

Ingredients

    • 120-150g pork fillet
    • 2 tablespoons cashews
    • 5 bite-size pieces of broccoli
    • 1 tablespoon oil
    • 4-6 fresh mint leaves, thinly sliced

    Marinade:

    1 tablespoon honey

    ½ tablespoon soy sauce

    ½ tablespoon oyster sauce

    ½ tablespoon lime marmalade

    2 teaspoons grated ginger

    ½ tablespoon Chinese rice wine

    Sauce:

    ½ teaspoon cornflour

    1 teaspoon soy sauce

    1½ tablespoons water

    ½ teaspoon Vegeta

Method

  • Cut pork into bite-size cubes
  • Mix the marinade ingredients together in a bowl and add the pork pieces stir to combine, marinate for at least 1 hour
  • Cover broccoli pieces with boiling water and set aside for 1-2  minutes, then drain
  • Combine the sauce ingredients, stir well
  • Heat the oil in a medium-size frying pan and add the pork pieces, stir-fry for 2-3 minutes
  • Add the drained broccoli and sauce, stir and cook for another 2 minutes
  • Stir in cashews and half the mint (garnish with remainder)
  • Serve and enjoy
