So yummy and filling
Ingredients
- 2 large mushrooms, peeled and stems removed
- 1-2 tablespoons extra virgin olive oil (EVOO)
- 2-3 tablespoons of fresh mixed chopped herbs
- 3-4 tablespoons of crumbled goats cheese
- Chopped herbs to garnish
Method
Preheat oven to 180º
- Drizzle EVOO over mushroom cups
- Cook for 10 minutes in hot oven
- Remove the mushrooms from oven and sprinkle the mixed herbs and goats cheese over the top
- Place back in oven and cook for further 8-10 minutes
- Sprinkle with a few herbs and serve as a side or main
Note:
I used fresh thyme, oregano and tarragon as my mixed herbs, you can use any fresh or dried herbs you prefer
