Goats Cheese and Herbed Mushrooms

So yummy and filling


  • 2 large mushrooms, peeled and stems removed
  • 1-2 tablespoons extra virgin olive oil (EVOO)
  • 2-3 tablespoons of fresh mixed chopped herbs
  • 3-4 tablespoons of crumbled goats cheese
  • Chopped herbs to garnish


Preheat oven to 180º

  • Drizzle EVOO over mushroom cups
  • Cook for 10 minutes in hot oven
  • Remove the mushrooms from oven and sprinkle the mixed herbs and goats cheese over the top
  • Place back in oven and cook for further 8-10 minutes
  • Sprinkle with a few herbs and serve as a side or main


I used fresh thyme, oregano and tarragon as my mixed herbs, you can use any fresh or dried herbs    you prefer
