French Toast with Berries

A lazy Sunday treat, Why not!

Ingredients

  • 2 slices of day old bread ( I use sour dough)
  • 1 egg
  • ¼ cup of (½ & ½) ½ cream ½ milk
  • 1 teaspoon maple syrup
  • 1 tablespoon maple syrup *extra for topping
  • dash vanilla
  • 1 tablespoon butter
  • spray oil
  • strawberries
  • blueberries
  • drizzle of cream

Method

  • Spread the bread thinly with butter on both sides
  • In a flat bowl mix together the egg, milk, cream, teaspoon maple syrup and vanilla
  • Place fry pan on stovetop and heat over medium-high heat, spray with oil or lightly butter
  • Dip the bread into the egg mixture (leave in long enough to soak in) turn over and soak the other side
  • Then place the eggy bread into the medium-hot greased pan, cook till browned but not burnt, flip and cook other side
  • Meanwhile, slice the strawberries and place both blueberries and strawberries on a microwave plate and heat in microwave for 1 minute
  • Place the toast on a serving plate and top with strawberries, blueberries, drizzle with the cream and *extra maple syrup
