
Curried sausages were always on the menu at our house when I was a child. Here is my version, I just love the taste of Thai
Ingredients
- 3 thick beef sausage
- 1 tablespoon butter
- ½ brown onion, chopped
- 1 tablespoon red curry paste
- 1 teaspoon mango chutney
- ¾ cup coconut milk
- 1 cup diced mixed vegetables
- 1 tablespoon chopped parsley
- 1 tablespoon chopped coriander *option
Method
- Place the butter in a frying pan, over medium heat, till it melts
- Add the onions and sauté for 1 minute then remove from pan
- Add sausages and cook evenly by turning every few minutes.
- Remove the sausages and cut into thick rounds
- Add curry paste to the pan and stir into the pan juice, cook for 1-2 minutes
- Pour in the coconut milk and stir to combine
- Meanwhile steam the vegetables in a microwave or over boiling water, till just tender
- Return the sausages, onions and vegetables to pan and reheat
- Add the chopped parsley and *coriander if desired, mix in
- Serve with steamed rice or my favourite creamy mashed potato
