Curried Sausages with a Thai Twist

Curried sausages were always on the menu at our house when I was a child. Here is my version, I just love the taste of Thai


  • 3 thick beef sausage
  • 1 tablespoon butter
  • ½ brown onion, chopped
  • 1 tablespoon red curry paste
  • 1 teaspoon mango chutney
  • ¾ cup coconut milk
  • 1 cup diced mixed vegetables 
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped coriander *option


  • Place the butter in a frying pan, over medium heat, till it melts
  • Add the onions and sauté for 1 minute then remove from pan
  • Add sausages and cook evenly by turning every few minutes. 
  • Remove the sausages and cut into thick rounds
  • Add curry paste to the pan and stir into the pan juice, cook for 1-2 minutes
  • Pour in the coconut milk and stir to combine
  • Meanwhile steam the vegetables in a microwave or over boiling water, till just tender 
  • Return the sausages, onions and vegetables to pan and reheat
  • Add the chopped parsley and *coriander if desired, mix in 
  • Serve with steamed rice or my favourite creamy mashed potato
