Ingredients
- 2 cups chopped spinach, stalks removed
- 1 teaspoon butter
- 1 teaspoon oil
- 1 tablespoon *extra butter
- ½ small brown onion, finely chopped
- ¼ teaspoon garlic, minced
- 1 teaspoon plain flour
- ¼ cup milk
- 1 tablespoon milk/cream *optional extra
- A pinch of freshly grated nutmeg
- 1 tablespoon parmesan cheese, grated
- A sprinkle of cayenne pepper *optional
Method
- Heat butter and oil in saucepan over high heat. Add spinach and cover with lid to help steam the spinach. Stir occasionally, till spinach just wilts, or you can cook spinach in microwave for 3-5 minutes, till it just wilts
- Remove from heat and drain in strainer. Push as much of the liquid out as possible, then place in 4 layers of paper towel squeeze out any excess liquid. Spinach needs to be dry
- Make the onion sauce by melting extra butter in saucepan, add onion and garlic to pan and fry for 2 minutes while stirring
- Add the plain flour, stir and cook for 1-2 minutes
- Add the milk gradually, (stirring to prevent lumps) cook for 2-3 minutes till thickens
- Add the spinach and nutmeg, stir to combine and heat through. If too thick add a little *extra milk or cream
- Top with grated parmesan cheese and *cayenne pepper
Serve as a side dish
