
This recipe was given to me by my daughter Heidi, it is Tasty & Easy .
Ingredients
- 2 cooked chicken pieces
- 1 teaspoon oil
- ¼ brown onion, chopped
- ½ teaspoon tomato paste
- 5 sun-dried tomatoes, chopped
- 1 tablespoon white wine
- 2 tablespoons chicken stock
- ¼ cup cream
- 2 finely chopped sage leaves
Method
- Heat oil in pan and fry onions until well browned
- Add the wine and tomato paste and stir to combine. Cook till liquid reduces to almost nothing
- Add the cream, stock and sage and stir to combine
- Add cooked chicken pieces. Bring the sauce to a boil, then reduce to a simmer. Cook till chickenis heated through and the sauce has started to thicken
- Serve with my “Lemon Spinach with Mint” on the side
Both of these recipes are full of flavour and complement each other - Note: You can substitute the chicken pieces with cooked chicken meat
