Chicken with Creamy Sun-Dried Tomato Sauce

This recipe was given to me by my daughter Heidi, it is Tasty & Easy .


  • 2 cooked chicken pieces
  • 1 teaspoon oil
  • ¼ brown onion, chopped
  • ½ teaspoon tomato paste
  • 5 sun-dried tomatoes, chopped
  • 1 tablespoon white wine
  • 2 tablespoons chicken stock
  • ¼ cup cream
  • 2 finely chopped sage leaves


  • Heat oil in pan and fry onions until well browned
  • Add the wine and tomato paste and stir to combine. Cook till liquid reduces to almost nothing
  • Add the cream, stock and sage and stir to combine
  • Add cooked chicken pieces. Bring the sauce to a boil, then reduce to a simmer. Cook till chickenis heated through and the sauce has started to thicken
  • Serve with my “Lemon Spinach with Mint” on the side
    Both of these recipes are full of flavour and complement each other
  • Note: You can substitute the chicken pieces with cooked chicken meat
