This thick soup warms the soul on a cold winter’s day
Ingredients
- ½ brown onion, chopped
- 1 tablespoon butter
- 250g broccoli, finely chopped
- 250g sweet potato, finely chopped
- 2 cups of vegetable stock
- 1 cup water
*optional
- Sour cream or greek yoghurt
Method
- Heat butter until melted in a medium-size saucepan
- Add onion and cook for 1 minute
- Add the broccoli and sweet potato and cook while stirring for 5 more minutes
- Add the stock and water and bring to the boil, then reduce heat to low and simmer for 10-15 minutes
- Cool slightly before blending
- Stir in *optional sour cream or yoghurt
- Serve with crusty bread
