Apple and Baby Spinach Salad

The crispy apple, sweetness of the cranberries and the crunch of the walnut makes this salad yummy. 

Ingredients

Salad:

  • small handful of baby spinach
  • 1 cheek of red and green apple, thinly-sliced
  • ¼  small red onion, peeled and thinly-sliced
  • ¼  cup walnuts, toasted and roughly chopped
  • 60g dried cranberries
  • 2 ½ tablespoon goat cheese, crumbled

Mustard/Vinaigrette Dressing:

  • 15 ml extra virgin olive oil
  • 10 ml apple cider vinegar
  • 1 teaspoon lemon juice
  • 1½ teaspoon Dijon mustard
  • ¼ teaspoon minced garlic
  • pinch of salt and black pepper
  • 1 teaspoon honey

Method

Salad:

  • Combine all the salad ingredients and toss gently

Dressing:

  • Whisk all dressing ingredients together, pour over the salad
