The crispy apple, sweetness of the cranberries and the crunch of the walnut makes this salad yummy.
Ingredients
Salad:
- small handful of baby spinach
- 1 cheek of red and green apple, thinly-sliced
- ¼ small red onion, peeled and thinly-sliced
- ¼ cup walnuts, toasted and roughly chopped
- 60g dried cranberries
- 2 ½ tablespoon goat cheese, crumbled
Mustard/Vinaigrette Dressing:
- 15 ml extra virgin olive oil
- 10 ml apple cider vinegar
- 1 teaspoon lemon juice
- 1½ teaspoon Dijon mustard
- ¼ teaspoon minced garlic
- pinch of salt and black pepper
- 1 teaspoon honey
Method
Salad:
- Combine all the salad ingredients and toss gently
Dressing:
- Whisk all dressing ingredients together, pour over the salad
