Ingredients

  • 1 cup of good quality chicken stock
  • 1 teaspoon soy sauce
  • pinch salt
  • pinch sugar
  • pinch white pepper
  • splash fish sauce
  • 1 bok choy
  • 1 tablespoon sliced red chilli
  • 1 green shallot, sliced
  • Sprig of coriander

Wontons

  • 2 cloves garlic, minced
  • pinch white peppercorns
  • 2 coriander roots
  • 100 g prawns, finely chopped
  • 120 g pork mince
  • 1 egg
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 2 teaspoons tapioca starch
  • 1 pkt wonton wrappers

Method

  • Wontons (makes 25) (place 5 wontons into each ziplock bag and freeze)
    • Place all ingredients except the wrappers into a food processor, pulse to make a paste 
    • Separate each wrapper and place 1 teaspoon full of the mixture in the centre of the wrapper. The easiest way to fold them is to bring all four corners up together and twist them tight

  • Soup
    • In a small saucepan of boiling water, add 5 wontons and cook for 2-3  minutes, until they float. Remove and place in serving bowl
    • Add bok choy to the same water and simmer until it wilts, drain and place into same serving bowl
    • Using same dried saucepan, add stock, soy sauce, salt and pepper, sugar, and fish sauce, bring to the boil. Pour over the wontons and bok choy, sprinkle with chilli, coriander and shallots
    • Serve and enjoy
