This lovely refreshing salad is well worth making. It’s tangy and delicious

  • ¼ cup bulgur
  • ½ cup diced cherry tomatoes
  • ½ cup diced and deseeded cucumber
  • ½ cup finely chopped parsley leaves
  • ¼ cup finely chopped mint
  • 2 tablespoons chopped green onion (shallot)
  • ½ teaspoon salt (¼ + ¼) 
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon grated garlic


  • Place the bulgur into a small bowl and cover with boiling water and soak for 10 minutes, then drain 
  • Meanwhile, in a separate bowl add the tomatoes and cucumber with ¼ teaspoon salt, stir to combine, set aside for 10 minutes (allowing time to extract the moisture), then drain off any excess liquid
  • Add the onion, parsley, mint, and drained bulgur to the tomato and cucumber
  • Combine the oil, lemon juice, and garlic with the remaining ¼ teaspoon salt, add this to the mixture and stir through
  • Place the salad into a serving dish
  • Serve and Enjoy!
  • Note: You may need to add more lemon juice or salt. Adjust to your liking
