
This lovely refreshing salad is well worth making. It’s tangy and delicious

Ingredients
- ¼ cup bulgur
- ½ cup diced cherry tomatoes
- ½ cup diced and deseeded cucumber
- ½ cup finely chopped parsley leaves
- ¼ cup finely chopped mint
- 2 tablespoons chopped green onion (shallot)
- ½ teaspoon salt (¼ + ¼)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- ½ teaspoon grated garlic
Method
- Place the bulgur into a small bowl and cover with boiling water and soak for 10 minutes, then drain
- Meanwhile, in a separate bowl add the tomatoes and cucumber with ¼ teaspoon salt, stir to combine, set aside for 10 minutes (allowing time to extract the moisture), then drain off any excess liquid
- Add the onion, parsley, mint, and drained bulgur to the tomato and cucumber
- Combine the oil, lemon juice, and garlic with the remaining ¼ teaspoon salt, add this to the mixture and stir through
- Place the salad into a serving dish
- Serve and Enjoy!
- Note: You may need to add more lemon juice or salt. Adjust to your liking
