Ingredients

- 3-4 chicken wings
- ¾ cup buttermilk
- ⅓ cup plain flour
- 2 tablespoons cornflour
- ½ teaspoon baking powder
- oil for frying
Spices
- 1 teaspoon chicken salt
- ½ teaspoon thyme
- ½ teaspoon celery salt
- ½ teaspoon dried mustard
- 2 teaspoons paprika (I used hot)
- ½ teaspoon garlic powder
- 1 teaspoon ground ginger
- 1½ white pepper
- ½ teaspoon onion powder
- 1 teaspoon dried tarragon
- 1 teaspoon cayenne pepper
Method
- Grind all spices together in a mortar and pestle
- Cut the chicken wings at each joint and discard the tips
- Add buttermilk to ziplock bag or bowl and add 1½ tablespoons of the mixed spices, mix to blend
- Add the chicken wings to the buttermilk mixture and coat well
- Marinate for 30 minutes plus
- Mix together plain flour, cornflour and baking powder in a ziplock bag. Add remainder of spice mixture and toss to combine
- Remove the chicken pieces one at a time and place into the flour mixture and coat well
- Repeat with the rest of the chicken. Discard the remainder of flour and buttermilk mixture
- Preheat oven 180ºc
- Heat oil in a frying pan over medium-high heat. Cook chicken pieces until golden brown, approximately 2-3 minutes each side, depending on the thickness
- Transfer wings onto a wire rack and place onto a baking tray lined with baking paper
- Cook in oven 8-10 minutes or until cooked through. Enjoy!
