Spiced Eggplant

Take this healthy vegetable to a new level with these simple and tasty spices

Ingredients

  • 1 medium (220g-250g) eggplant
  • 1 tablespoon oil
  • 1½ teaspoons salt
  • 1 tablespoon olive oil 
  • ½ teaspoon crushed garlic
  • ½ teaspoon ground cumin
  • ¼ teaspoon chilli powder
  • ¼ cup yoghurt
  • 2 tablespoons finely chopped mint

Method

  • Cut the eggplant into long wedges. Drizzle with the oil and sprinkle with salt, set aside
  • Preheat the grill to medium-high. Place the eggplant wedges onto the grill and char, turning to brown and cook evenly. (10-15 minutes depending on the size of wedges) 
  • Combine the olive oil, garlic, cumin and chilli in a bowl, Add the hot eggplant and gently toss to coat evenly
  • Mix the yoghurt and mint together and place in a small bowl
  • Place the spiced eggplant onto a serving plate with the yoghurt
  • Serve and Enjoy!
