Ingredients
- 1 medium (220g-250g) eggplant
- 1 tablespoon oil
- 1½ teaspoons salt
- 1 tablespoon olive oil
- ½ teaspoon crushed garlic
- ½ teaspoon ground cumin
- ¼ teaspoon chilli powder
- ¼ cup yoghurt
- 2 tablespoons finely chopped mint
Method
- Cut the eggplant into long wedges. Drizzle with the oil and sprinkle with salt, set aside
- Preheat the grill to medium-high. Place the eggplant wedges onto the grill and char, turning to brown and cook evenly. (10-15 minutes depending on the size of wedges)
- Combine the olive oil, garlic, cumin and chilli in a bowl, Add the hot eggplant and gently toss to coat evenly
- Mix the yoghurt and mint together and place in a small bowl
- Place the spiced eggplant onto a serving plate with the yoghurt
- Serve and Enjoy!
