This quick and easy meal is made in minutes and is great served any time of the day.or night
Ingredients
- 2 eggs
- 2 x 1 tablespoons chopped parsley
- pinch salt and pepper
- 1 tablespoon milk*optional
- 1 tablespoon butter
Method
- Beat the eggs, add 1 tablespoon chopped parsley (*and milk if preferred lighter egg)
- Season with salt and pepper
- Heat a medium-size pan over medium heat, melt the butter to a froth
- Add the egg mixture, using a spatula move the egg from the outside to the centre, keep doing this until the all the egg is cooked
- Serve with a slice of toast and sprinkle with the remaining chopped parsley
