This dipping sauce is on every Thai table. It’s quick and easy to make and adds a salty-spicy addition to any meal. I do love it, especially on fried eggs for breakfast. Enjoy!

Ingredients
- 15ml fish sauce
- 10ml lime juice
- pinch sugar
- 1 clove garlic, finely chopped
- 1 teaspoon finely chopped onion
- 1 teaspoon torn coriander leaves
- 1 red birds-eye chilli, (deseed to reduce heat)
- 1 green birds-eye chilli, (deseed to reduce heat)
Method
- Add fish sauce, lime juice, sugar, garlic, onion, coriander, and chillies, stir to dissolve sugar.
- Place bowl on the table and spoon over any meal, rice, or soup for extra spice.
Season to taste.
- Add more fish sauce for more salt
- Add lime juice if too salty
- Add sugar if too bitter or spicy.
Note: This sauce is always on the Thai tables served as a seasoning to any food that needs a little extra spice. (It’s known as their salt and pepper)
