A deliciously healthy bowl of yumminess, make into a wrap or eat as is
Ingredients
- 1 serving of Guacamole Link it
- 1 (126g) tin of black beans, rinsed and drained
- ¼ cup of precooked Quinoa-Rice
- small handful of lettuce leaves
- ¼ cup grated cheese
- 1 cheek of red capsicum, sliced
- 1-2 finger cucumbers, quartered lengthways
- ½ carrot, quartered lengthways
- ½ celery, stick halved lengthways
- 2 wraps *Optional
Method
- Prepare Guacamole as per recipe
- Rinse and dry vegetables and cut into lengths
- Arrange lettuce, vegetables, black beans, quinoa-rice, cheese and Guacamole in a bowl
- Prepare your wrap if required by adding any or all from the bowl, roll wrap and enjoy
