Mexican Black Bean-Quinoa-Rice Salad

Mexican Black Bean-Quinoa-Rice Salad by

A deliciously healthy bowl of yumminess, make into a wrap or eat as is


  • 1 serving of Guacamole Link it
  • 1 (126g) tin of black beans, rinsed and drained
  • ¼ cup of precooked Quinoa-Rice
  • small handful of lettuce leaves
  • ¼ cup grated cheese
  • 1 cheek of red capsicum, sliced
  • 1-2 finger cucumbers, quartered lengthways
  • ½ carrot, quartered lengthways
  • ½ celery, stick halved lengthways
  • 2 wraps *Optional


  • Prepare Guacamole as per recipe
  • Rinse and dry vegetables and cut into lengths
  • Arrange lettuce, vegetables, black beans, quinoa-rice, cheese and Guacamole in a bowl
  • Prepare your wrap if required by adding any or all from the bowl, roll wrap and enjoy
