I just love a good stir fry, they are so quick and easy to make. Enjoy
Ingredients
Marinade
1 teaspoon soy sauce
1 teaspoon oyster sauce
1 teaspoon hoisin sauce
½ teaspoon Chilli sauce
- 1 chicken thigh, sliced
- ½ cup carrot, using a potato peeler make long ribbons
- 1 cheek red capsicum, sliced
- 2 green beans, quartered
- 4-6 snow peas, sliced
- 1 green shallot, sliced
- 2 tablespoon coconut oil
- ½ teaspoon crushed garlic
- ½ teaspoon curry powder
- ½ teaspoon chilli jam
- ½ teaspoon grated ginger
- ½ teaspoon sesame oil
- 1 tablespoon soy sauce
- ½ pkt (75g) ramen noodles
- Garnish with a pinch of sesame seeds
Method
- Mix with the marinade ingredients in a bowl, add the chicken, stir and refrigerate
- Meanwhile, prepare all the vegetables
- Heat 1 tablespoon coconut oil in a frying pan, add chicken and cook through 3-5 minutes. Remove from pan and set aside
- Heat remaining tablespoon of oil to the pan, add garlic and ginger and cook for 1 minute
- Add all the vegetables to pan, stir and cook a further 4-5 minutes or until vegetables are just cooked.
- Add sesame oil and soy sauce
- Return chicken to the pan with vegetables, adding any remaining marinade
- Rinse noodles with boiling water, drain and add to the pan, stir and heat through
- Place in a bowl, sprinkle with sesame seed.
- Serve and Enjoy
