Loaded Fruit Nut and Vegetable Salad

Loaded Fruit, Nut, Vegetable, Salad by cooking meals for one

A bowl full of tasty goodness


  • ½ cup cauliflower florets, chopped
  • ½ cup broccoli florets, chopped
  • 1 tablespoon chopped onion
  • ¼ cup chopped red apple
  • ¼ cup cranberries
  • 1 tablespoon chopped pistachio’s 
  • ½ cup finely grated cheese
  • 1 strip bacon, cooked and diced *optional

   Salad Dressing:

  • 1 tablespoon Greek yoghurt
  • 1 tablespoon sour cream
  • 1 teaspoon red vinegar
  • 1 teaspoon pomegranate molasses 
  • 1 teaspoon lemon juice


  • Mix the salad dressing ingredients together and set aside
  • In a large bowl place all the salad ingredients (omit the bacon for vegetarian *option), pour the dressing over the salad and toss to combine.
  • Serve as a side dish or as a light meal
