Healthy Taco Lettuce Cups

Who doesn’t like a healthy treat in 10 minutes

Ingredients

  • 40g mince of choice (pork, veal, beef or chicken)
  • ½ teaspoon Taco seasoning
  • 1 teaspoon oil
  • 3 baby cos lettuce leaves
  • 3 tablespoons grated cheese
  • ½ small avocado
  • 1 teaspoon lime juice
  • 3 teaspoons tomato salsa
  • 3 teaspoons sour cream 
  • 3 corn chips, crumbled

   *optional extra 

  • Lime juice for dressing the tacos

Method

  • Heat oil in frying pan over medium high heat. Add mince and taco seasoning, stir until browned and cooked through
  • Meanwhile mash the avocado with lime juice

  Assemble the taco by placing lettuce cups on serving plate

  • !st layer grated cheese
  • 2nd layer cooked mince
  • 3rd layer salsa
  • 4th layer mashed avocado
  • 5th layer sour cream
  • 6th layer crumbled corn chips

  Serve with *optional lime juice and Enjoy!
