Tasty Light and Easy Salad
Ingredients
- 2 hard boiled eggs
- 1 teaspoon mayonnaise
- 1 tablespoon chopped shallot
- 1 teaspoon chopped parsley
- 1 tablespoon chopped cucumber
- 1 tablespoon chopped celery
- 1 teaspoon mung beans
- salt and pepper to taste
- pinch of paprika
- sprinkle of alfalfa sprout
Method
- Chop the eggs
- Add the mayonnaise, shallots, parsley, cucumber, celery, mung beans, salt and pepper
- Garnish with a sprinkle of paprika and alfalfa sprouts
