Deliciously Creamy and Tangy
Ingredients
- ½ Lebanese cucumber, thinly sliced
- 3 thin slices of red onion
- pinch salt and black pepper
- 2 tablespoons greek yoghurt
- 1½ tablespoons good quality mayonnaise
- 2 teaspoons lemon juice
- 1 tablespoon chopped dill
- ½ teaspoon minced garlic
Method
- Mix together the yoghurt, mayonnaise, garlic, lemon juice, dill and S & P
- Combine the sliced onion and cucumber and add to the yoghurt/mayo mixture, toss to coat well
- Garnish with a sprig of fresh dill
- Serve with my “Creamy Lemon Veal”
- Also great with salmon, prawns or chicken
