Ways to use cooked chicken: A very tasty easy meal prepared in under 30 minutes

Ingredients
- 1 cup of shredded cooked chicken
- ½ cup of cream of chicken soup OR
Blend the following ingredients until smooth
½ teaspoon Vegeta
2 tablespoons cooked chicken, chopped
¼ cup chicken stock
¼ cup cream
2 tablespoon greek yoghurt
- 1 green shallot, sliced
- 1 tablespoon red capsicum, julienne
- 4-6 asparagus spears (jarred or canned)
- ⅓ cup grated cheese
- 1 teaspoon grated parmesan cheese
- sprinkle of paprika
- salt and pepper to taste
Method
- Preheat oven 180ºc
- Line the base of a small casserole dish with the cooked chicken
- Pour the soup or blended ingredients over the chicken
- Sprinkle the shallots and capsicum over the top
- Arrange the asparagus spears evenly on top
- Season with salt and pepper
- Cover with the grated cheese and parmesan
- Sprinkle with paprika
- Bake in preheated oven for 15-20 minutes, or until golden
- Note: Vegeta is a vegetable stock powder
