Baked Jacket Potato in Foil by

The sour cream filling goes so well with this fluffy potato 


  • 1 large potato
  • 2 tablespoons sour cream
  • 1 teaspoon lemon juice
  • 1 tablespoon chives 
  • foil


Preheat oven 180ºc

  • Wash the potato skin and pat dry
  • Pierce the potato all over with a wooden skewer
  • Cook in microwave 3-4 minutes, remove from microwave
  • Wrap the potato in foil
  • Place the potato in the oven and cook for 35-40 minutes until cooked through and fork tender 
  • Remove from oven, cut a cross in the top of the foiled potato and gently squeeze the potato to open 
  • Mix the sour cream, lemon juice and chives together and place on top of the potato
  • Serve as a side, great with chicken, beef, pork or lamb
