
The sour cream filling goes so well with this fluffy potato
Ingredients
- 1 large potato
- 2 tablespoons sour cream
- 1 teaspoon lemon juice
- 1 tablespoon chives
- foil
Method
Preheat oven 180ºc
- Wash the potato skin and pat dry
- Pierce the potato all over with a wooden skewer
- Cook in microwave 3-4 minutes, remove from microwave
- Wrap the potato in foil
- Place the potato in the oven and cook for 35-40 minutes until cooked through and fork tender
- Remove from oven, cut a cross in the top of the foiled potato and gently squeeze the potato to open
- Mix the sour cream, lemon juice and chives together and place on top of the potato
- Serve as a side, great with chicken, beef, pork or lamb
