This crispy apple slaw makes the perfect side dish to pork

Ingredients
- ½ cup red cabbage
- ½ cup green cabbage
- 1 small carrot, grated
- 1 green shallot, thinly sliced
- 1 tablespoon chopped parsley
- ½ granny smith apple, grated
- 1 tablespoon slivered almonds, toasted
- salt and pepper to taste
- Dressing
- ½ tablespoon apple cider vinegar
- 1 tablespoon whole egg mayonnaise
- 1 tablespoon Greek yoghurt
Method
- Make the dressing by combining the vinegar, mayonnaise and yoghurt together
- Place all slaw ingredients in a bowl with the dressing and mix well
Serve and Enjoy!
Note: This slaw goes nicely with pork
