Vietnamese Prawn Rice Paper Rolls

  • 2 rice paper wrappers
  • vermicelli noodles (2 tablespoons softened)
  • 4 cooked prawns, peeled and halved lengthways
  • 2 slices avocado, cut into 6 sticks
  • 1 cheek of red capsicum, cut into 6 sticks
  • ½ Lebanese cucumber, deseeded, cut into 6 sticks
  • 1 tablespoon mint leaves
  • 1 tablespoon coriander leaves

Dipping Sauce

  • 1 birds-eye chill, finely chopped
  • 1 tablespoon cucumber, de-seeded & finely chopped
  • 1½ tablespoons fish sauce
  • 1½ tablespoon lime juice
  • pinch sugar
  • 1 teaspoon red onion, finely chopped
  • 1 teaspoon mint, finely chopped


  • Make the Dipping Sauce by combining all the ingredients and set aside
  • Soak the rice paper wrappers in warm water, until just soft. Remove and drain well
  • Soak the vermicelli noodles in warm water, until softened, remove and drain, then roughly chop
  • Place wrappers on a silicon mat or board and layer with the following
  • Prawns, avocado, capsicum, cucumber, mint, coriander and vermicelli noodles
  • Roll up carefully and place on serving plate

   Serve with dipping sauce and Enjoy!

Note: You can use sweet chilli sauce for dipping if preferred
