Ingredients
- 2 rice paper wrappers
- vermicelli noodles (2 tablespoons softened)
- 4 cooked prawns, peeled and halved lengthways
- 2 slices avocado, cut into 6 sticks
- 1 cheek of red capsicum, cut into 6 sticks
- ½ Lebanese cucumber, deseeded, cut into 6 sticks
- 1 tablespoon mint leaves
- 1 tablespoon coriander leaves
Dipping Sauce
- 1 birds-eye chill, finely chopped
- 1 tablespoon cucumber, de-seeded & finely chopped
- 1½ tablespoons fish sauce
- 1½ tablespoon lime juice
- pinch sugar
- 1 teaspoon red onion, finely chopped
- 1 teaspoon mint, finely chopped
Method
- Make the Dipping Sauce by combining all the ingredients and set aside
- Soak the rice paper wrappers in warm water, until just soft. Remove and drain well
- Soak the vermicelli noodles in warm water, until softened, remove and drain, then roughly chop
- Place wrappers on a silicon mat or board and layer with the following
- Prawns, avocado, capsicum, cucumber, mint, coriander and vermicelli noodles
- Roll up carefully and place on serving plate
Serve with dipping sauce and Enjoy!
Note: You can use sweet chilli sauce for dipping if preferred
