I just love Summer and BBQs, Such a quick and easy way to cook and this meal is no exception. Fresh prawns with a tropical taste of fresh seasonal fruit, Enjoy!

Ingredients
- 6 green prawns
- 1 slice of fresh pineapple cut into chunks
- 2 wooden skewers
- drizzle of oil (I used chilli and coriander infused oil)
Salsa *Optional
- ¼ cup chopped mango
- ¼ cup chopped fresh pineapple
- 1 tablespoon chopped red onion
- 1-2 tablespoons chopped red capsicum
- 1 teaspoon Sriracha/chilli sauce*optional
- 1 tablespoon chopped mint
Dressing *Optional
- 1 tablespoon mango
- 1 tablespoon pineapple
- 1 tablespoon lime juice
- 1 teaspoon fish sauce
Method
- Make Optional Salsa: by combining all ingredients in a bowl
- Make Optional Dressing: Blitz the dressing ingredients together until smooth
- Soak the skewers in water before using (5 minutes)
- Thread prawns and pineapple pieces onto the skewers
- Drizzle with the oil coating the prawns and pineapple well, rub and set aside till ready to cook
- Heat barbecue grill to medium-high and place the skewers onto the hot hotplate and cook 2-3 minutes each side or until prawns are cooked through.
- Place the skewers onto a serving plate, serve with a salad of choice
- My choice was to serve them with mango salsa and dressing
