Super Green Frittata

What a great lite lunch/dinner and another quick and easy meal ready in 30 Minutes

Ingredients

  • ¼ cup baby spinach
  • 2 green shallots, sliced
  • ½ cup frozen broad beans, thawed and peeled
  • 2-3 teaspoons feta cheese, crumbled
  • 3 eggs, beaten
  • salt and pepper
  • 1 asparagus, shaved lengthways *optional
  • ¼ cup rocket *optional

Method

  • Preheat oven 180ºc
  • Place the spinach into the base of a greased 12cm pie dish
  • Sprinkle the sliced green shallots, feta and ½ the broad beans over the spinach
  • Pour the beaten egg over the ingredients, season to taste
  • Place the pie dish into the preheated oven and cook for 15-20 minutes
  • Top with the remaining broad beans and the shaved asparagus
  • Place under hot grill for 3-5 minutes, until it starts to turn golden 
  • Gently remove frittata from the pie dish and place onto serving plate
  • Garnish with rocket. Serve  and Enjoy!
  • Note: You can use any green vegetables you like in this frittata
