What a great lite lunch/dinner and another quick and easy meal ready in 30 Minutes

Ingredients
- ¼ cup baby spinach
- 2 green shallots, sliced
- ½ cup frozen broad beans, thawed and peeled
- 2-3 teaspoons feta cheese, crumbled
- 3 eggs, beaten
- salt and pepper
- 1 asparagus, shaved lengthways *optional
- ¼ cup rocket *optional
Method
- Preheat oven 180ºc
- Place the spinach into the base of a greased 12cm pie dish
- Sprinkle the sliced green shallots, feta and ½ the broad beans over the spinach
- Pour the beaten egg over the ingredients, season to taste
- Place the pie dish into the preheated oven and cook for 15-20 minutes
- Top with the remaining broad beans and the shaved asparagus
- Place under hot grill for 3-5 minutes, until it starts to turn golden
- Gently remove frittata from the pie dish and place onto serving plate
- Garnish with rocket. Serve and Enjoy!
- Note: You can use any green vegetables you like in this frittata
