A fresh & crispy salad to delight the palette
Ingredients
- 2 slices smoked salmon
- 1 cup of mixed lettuce
- ½ cup baby spinach
- 4-6 slices of cucumber
- 4 cherry tomatoes
- 2 tablespoons carrot, julienned
- 2 tablespoons goats cheese, crumbled
- ½ avocado, sliced
- wedge lemon
- garnish with a sprig of Dill
- Lemon Aioli
- 2 tablespoons Aioli + 1teaspoon lemon juice
Method
- Arrange the salad mix and baby spinach on a serving plate
- Top with halved cherry tomatoes
- Add sliced avocado and cucumber
- Add crumbled goats cheese and carrot
- Top with the smoked salmon
- Drizzle with aioli
- Garnish with a sprig of Dill
- Serve with a lemon wedge
