Celebrate Australia Day with this Easy-Tasty-Quick Meal

Ingredients
- 200g lamb loin steak (meat only) or 3 thick chops
- 2 teaspoons oil
- ½ brown onion, finely chopped
- 1 clove garlic, grated
- 1½ teaspoons red curry paste
- ¼ cup crunchy peanut butter
- ¼ cup of coconut milk
- 2 teaspoons Kecap Manis
- 1 teaspoon tomato sauce
- 1 teaspoon lime juice
Method
Satay Sauce:
- Heat the oil in a saucepan, add the onion and garlic. Stir while cooking until onion softens
- Add the curry paste and cook for 1 minute
- Add the peanut butter, stir, cook for 1 minute then add the coconut milk and ¼ cup of water
- Bring to boil, stir to prevent burning.
- Add tomato sauce and Kecap Manis, cook for 1 minute and stir until thickens slightly
- Reserve 1½ tablespoons of the satay sauce, for basting
- Place the remaining sauce into a serving bowl. Serve hot
Lamb: Preheat the grill
- Trim the meat by removing any fat and bones
- Cut the steak into bite-size cubes
- Tread cubes onto skewers
- Spray with oil and place onto a hot grill. Baste with the reserved satay, turning to cook evenly, approx. 8-10 Minutes (keep basting the steaks with more satay as you turn)
- Place the skewers onto a serving plate with the bowl of satay sauce
- Serve and Enjoy!
