Ingredients
- 1 fillet of white fish
- 1 tablespoon coconut oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon fresh lemon thyme leaves
- pinch chilli flakes
- pinch lemon salt
Salad of choice
4 baby cos lettuce or iceberg
8 slices of avocado
4 cherry tomatoes, quartered
8 thinly slices red capsicum
8 cucumber wedges
Mayo Dressing
2 teaspoons Mayonnaise
2 teaspoons lemon juice
Method
- Cut the fish into four finger length pieces
- Mix the cumin, smoked paprika, lemon thyme, chilli flakes and lemon salt together on a plate
- Coat the fish fingers in the spice rub
- Panfry the fish in hot oil, turning to cook evenly, 3-6 minutes depending on thickness of the fish
- Make the dressing by mixing the mayonnaise and lemon juice together
- Arrange the salad in each lettuce leaf and place the cooked fish fillet on top drizzle with lemon mayonnaise and serve
