Japanese Sesame Chicken Skewers

The sweetness of the honey and the bite of the ginger accentuates the Japanese flavours in this quick and easy meal

Ingredients

  • 1 tablespoon honey
  • ½ tablespoon sake
  • 1 teaspoon grated ginger
  • 1½ tablespoons mirin
  • 1½ tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • A splash sesame oil
  • 150g-200g chicken tenderloins, cut into cubes
  • 5-6 wooden skewers, soaked in water
  • 1 teaspoon minced garlic

Garnish

  • 1 teaspoon sesame seeds
  • A sprig of fresh parsley *optional

Method

  • Sauce:  Mix the honey, sake, ginger, mirin, soy sauce, vinegar, and sesame oil together, stir well to combine
  • Halve the sauce and reserve half for glazing. 
  • Add the chicken to the marinating half of the sauce and stir to coat. Refrigerate for at least 1 hour 
  • Add the reserved mixture to a small saucepan and bring to a boil, reduce heat to medium and cook until sauce reduces and thickens to a glaze consistency
  • Thread the marinated chicken pieces onto the wooden skewers 
  • Heat the grill pan to medium-high, spray lightly with oil
  • Add the chicken skewers to the pan and cook while basting with the reserved sauce, turning the skewers to cook chicken evenly and basting again
  • Place skewers onto a serving plate and sprinkle with sesame seeds 
  • Serve and Enjoy!
