The sweetness of the honey and the bite of the ginger accentuates the Japanese flavours in this quick and easy meal

Ingredients
- 1 tablespoon honey
- ½ tablespoon sake
- 1 teaspoon grated ginger
- 1½ tablespoons mirin
- 1½ tablespoons soy sauce
- 1 tablespoon rice vinegar
- A splash sesame oil
- 150g-200g chicken tenderloins, cut into cubes
- 5-6 wooden skewers, soaked in water
- 1 teaspoon minced garlic
Garnish
- 1 teaspoon sesame seeds
- A sprig of fresh parsley *optional
Method
- Sauce: Mix the honey, sake, ginger, mirin, soy sauce, vinegar, and sesame oil together, stir well to combine
- Halve the sauce and reserve half for glazing.
- Add the chicken to the marinating half of the sauce and stir to coat. Refrigerate for at least 1 hour
- Add the reserved mixture to a small saucepan and bring to a boil, reduce heat to medium and cook until sauce reduces and thickens to a glaze consistency
- Thread the marinated chicken pieces onto the wooden skewers
- Heat the grill pan to medium-high, spray lightly with oil
- Add the chicken skewers to the pan and cook while basting with the reserved sauce, turning the skewers to cook chicken evenly and basting again
- Place skewers onto a serving plate and sprinkle with sesame seeds
