Easy Baked Dinner with a deliciously different gravy

Ingredients

  • 1 chicken Maryland
  • 20g softened butter
  • ½ teaspoon dried mixed herbs

Maple-Soy Gravy

  • 1 tablespoon butter
  • 1 tablespoon plain flour
  • ½ cup chicken stock
  • 2 teaspoons soy sauce
  • 2 teaspoons maple syrup
  • ½ teaspoon Worcestershire sauce

Method

  • Preheat oven to 180ºc
  • Mix the herbs and butter together 
  • Carefully separate the skin from the chicken by moving your fingers under the skin to make a pocket
  • Gently pack the herbed butter into the pocket and spread out evenly over the chicken
  • Place chicken on a baking tray and cook in the oven for 25-35 minutes, depending on the size of chicken
  • Meanwhile, make Maple-Soy Gravy  
  • Place butter in a saucepan and melt over medium heat. Add flour and stir to combine cook for 1-2 minutes
  • Add stock slowly to prevent lumps. Stir in soy sauce, maple syrup and Worcestershire sauce
  • Reduce heat to low and cook until sauce thickens slightly 
  • Pour over chicken when cooked
  • I have served it with roasted vegetables and my Bacon and Almonds – Brussel Sprouts
