Easy Baked Dinner with a deliciously different gravy
Ingredients
- 1 chicken Maryland
- 20g softened butter
- ½ teaspoon dried mixed herbs
Maple-Soy Gravy
- 1 tablespoon butter
- 1 tablespoon plain flour
- ½ cup chicken stock
- 2 teaspoons soy sauce
- 2 teaspoons maple syrup
- ½ teaspoon Worcestershire sauce
Method
- Preheat oven to 180ºc
- Mix the herbs and butter together
- Carefully separate the skin from the chicken by moving your fingers under the skin to make a pocket
- Gently pack the herbed butter into the pocket and spread out evenly over the chicken
- Place chicken on a baking tray and cook in the oven for 25-35 minutes, depending on the size of chicken
- Meanwhile, make Maple-Soy Gravy
- Place butter in a saucepan and melt over medium heat. Add flour and stir to combine cook for 1-2 minutes
- Add stock slowly to prevent lumps. Stir in soy sauce, maple syrup and Worcestershire sauce
- Reduce heat to low and cook until sauce thickens slightly
- Pour over chicken when cooked
- I have served it with roasted vegetables and my Bacon and Almonds – Brussel Sprouts
