Ingredients
- ½ red birds-eye chilli, finely sliced
- ¼ teaspoon grated garlic
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- ½ tablespoon vegetable oil
- ½ teaspoon grated palm sugar
- 1 cup green mango * see note
- 1 small carrot * see note
- 1 green shallot, sliced
- 2 tablespoons roasted peanuts, roughly crushed
- 2 tablespoons coriander leaves, roughly chopped
- 2 tablespoons mint leaves, roughly chopped
- 1 teaspoon toasted sesame seeds
Method
- Make the dressing by blending chilli, garlic, lime juice, fish sauce, oil and palm sugar until smooth
- Grate carrot with a julienned peeler or mandolin
- In a large bowl, add the grated mango, grated carrot, shallot, coriander, mint and the dressing, toss to coat well
- Place on a serving plate and sprinkle with sesame seeds and peanuts
- Serve and Enjoy! with a wedge of lime
Note: * I used a julienne peeler for the carrot and mango (I love this little tool)
