Honestly, this crispy, crunchy slaw is coated in a delicious Sesame Dressing which will have you making it again and again. Serve it with or without protein, it’s a winner. Enjoy!

Ingredients
Salad:
- ¼ cup thinly sliced red cabbage
- ¼ cup thinly sliced green cabbage
- ¼ cup grated carrot
- ¼ cup chopped coriander
- 1 green onion, sliced
- ¼ cup roasted cashews, roughly chopped
- ¼ cup Chang’s fried noodles
Sesame Dressing:
- 1 tablespoon oil
- 1 tablespoon sesame oil
- 1 tablespoon greek yoghurt
- 2 teaspoons white vinegar
- 1 teaspoon sugar
- pinch garlic powder
- pinch of salt
Method
- Dressing: Mix all ingredients together until smooth
- Salad:
- Combine all ingredients in a bowl except cashews and fried noodles, place in the fridge until ready to serve
- Remove from fridge, add the cashews, noodles, and dressing, toss to coat well
- Place in a serving bowl or onto a plate
- Serve and Enjoy!
- Note: You can enjoy this delicious salad as a meal on its own or as a side to any protein
- Can be assembled ahead of time and refrigerated until ready to use
