Char Grilled Corn Capsicum and Halloumi Salad

I love the combinations of char-grilled halloumi and vegetables together, add them to this vibrant salad and you have one delightful plate of yumminess

  • 3 thin slices Halloumi
  • ½ cob corn kernels
  • 3 mini capsicums or 2-3 capsicum cheeks
  • 1 cup mixed salad greens
  • 6 cherry tomatoes, halved
  • 1 slice red onion
  • ½ avocado, sliced
  • ½ Lebanese cucumber, sliced
  • Salad dressing of choice *optional


  • Place the halloumi slices onto a hot grill, turn and char both sides. Remove from heat 
  • Place the capsicum onto a hot grill, turning to char evenly, cook until just tender approx. 3-5 minutes. Remove from heat 
  • Spray the corn with oil and place onto a hot grill, turning to char evenly. Remove from heat, then remove the kernels from the cob with a sharp knife
  • Place the salad greens onto a serving plate and arrange the halloumi, corn, capsicum, tomatoes, onion, avocado, and cucumber evenly over the greens 
  • Drizzle the *optional salad dressing evenly over the salad
  • Serve and Enjoy!
  • Note: You can use a hot grill pan to char vegetables and halloumi if preferred
