
I love the combinations of char-grilled halloumi and vegetables together, add them to this vibrant salad and you have one delightful plate of yumminess

Ingredients
- 3 thin slices Halloumi
- ½ cob corn kernels
- 3 mini capsicums or 2-3 capsicum cheeks
- 1 cup mixed salad greens
- 6 cherry tomatoes, halved
- 1 slice red onion
- ½ avocado, sliced
- ½ Lebanese cucumber, sliced
- Salad dressing of choice *optional
Method
- Place the halloumi slices onto a hot grill, turn and char both sides. Remove from heat
- Place the capsicum onto a hot grill, turning to char evenly, cook until just tender approx. 3-5 minutes. Remove from heat
- Spray the corn with oil and place onto a hot grill, turning to char evenly. Remove from heat, then remove the kernels from the cob with a sharp knife
- Place the salad greens onto a serving plate and arrange the halloumi, corn, capsicum, tomatoes, onion, avocado, and cucumber evenly over the greens
- Drizzle the *optional salad dressing evenly over the salad
- Serve and Enjoy!
- Note: You can use a hot grill pan to char vegetables and halloumi if preferred
