I love the refreshing taste of basil and tomato bruschetta served on crusty toast, you can top it with a poached egg for breakfast/brunch or serve as is 


  • 1 Tomato chopped
  • ½ Red onion chopped
  • ¼ cup Sweet Basil chopped or torn
  • Salt and Pepper
  • Balsamic vinegar *Optional
  • Garlic
  • Olive oil
  • Bread stick


  • Slice bread on angle
  • Toast or grill the bread
  • Rub the hot bread with garlic and drizzle with oil
  • Meanwhile mix the tomato, onion, basil and S & P in a bowl
  • Place the tomato mixture on top of bread and drizzle with balsamic vinegar if desired
